Classic Red Velvet Cupcakes

In honor of Valentines Day I would like to share with you guys my go to Classic
Red Velvet Recipe, enjoy!

322 g cake flour
170 g soft butter (unsalted)
457 g granulated sugar
3 eggs
6 T red food color (edible airbrush color if you have)
3 T cocoa powder
1 1/2 tsp vanilla Extract
1 1/2 tsp salt
363 g buttermilk
1 1/2 tsp white vinegar
1 1/2 tsp baking soda

Preheat oven to 350 F
Cream the butter and sugar until very light fluffy
Gradually add the eggs, beating well after each addition
In a small bowl, whisk together: the red food color, cocoa powder, and vanilla. Add to butter mixture and beat well.
Add the salt to the buttermilk.  Add buttermilk to batter, alternately with flour, in three stages, scraping down after each addition.
Finally, mix the baking soda with the vinegar and stir into the batter.  Mix until combined.
Portion out into the cupcake pans and bake for 20 mins.

Don't forget to rotate your pans for even heating!
As a substitute for buttermilk, take 1 tbsp of white distilled vinegar and mix with 1 cup of whole milk, let it stand for 5 minutes and it will be good to go.

Love is in the air....

This Friday is Valentines Day,  fortunately for me and my husband both of us don't really celebrate the craziness of this day, so a good take out and of course a good dessert at home will definitely do the trick for us. Remember, showing your love and appreciation to the people important to you should not only last for a day, make it an everyday thing.  How are you guys celebrating your Valentines?
